Ingredients:
– 1 cup creamy peanut butter
– 3/4 cup granulated sugar
– 1/4 cup brown sugar, packed
– 1 large egg
– 1 teaspoon vanilla extract
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt (omit if using salted peanut butter)
Directions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, combine peanut butter, granulated sugar, brown sugar, egg, vanilla extract, baking soda, and salt, mixing until smooth and well blended.
Roll about 1 tablespoon of dough into balls and place them on the baking sheet, spacing them 2 inches apart.
Flatten each ball slightly with a fork in a criss-cross pattern.
Bake for 8-10 minutes, or until the edges are set. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
