Ingredients:
1 lb ground beef (or turkey)
1 packet taco seasoning
1 head of lettuce, chopped
1 cup cherry tomatoes, halved
1 cup shredded cheddar cheese
1 can black beans, drained and rinsed (optional)
1 cup corn (frozen or canned, drained)
1/2 red onion, finely chopped
1 small bag Nacho Cheese Doritos, crushed slightly
1/2 cup Catalina or Ranch dressing (to taste)
Optional toppings:
Sliced olives
Diced avocado
Sour cream
Jalapeños
Instructions:
Brown the ground beef in a skillet over medium heat. Drain the fat.
Add taco seasoning and a splash of water; cook until well combined. Let it cool slightly.
In a large bowl, combine lettuce, tomatoes, cheese, beans, corn, and onion.
Add the cooled taco meat.
Toss with crushed Doritos and dressing right before serving so it stays crunchy.
