Total Time: 1 hour 40 minutes

Yields: 24 cookies

Ingredients:

1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

Royal icing (for decoration)

Directions:

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Divide the dough into two equal portions and shape each portion into a disk. Wrap them in plastic wrap and refrigerate for at least 1 hour or until firm.

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

On a floured surface, roll out one portion of the chilled dough to about 1/4 inch thickness.

Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheets.

Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden.

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Once the cookies are completely cooled, decorate them with royal icing in various colors and designs.

Let the icing set before storing the cookies in an airtight container.

Repeat the rolling, cutting, and baking process with the remaining portion of dough.
