Ingredients:
1 stick butter, softened
⅓ cup vegetable oil
½ cup granulated sugar
¼ cup powdered sugar
1 egg
1 tsp vanilla extract
2 ⅓ cups flour
¼ tsp salt
¾ tsp baking powder
Pumpkin Pie Filling:
3 oz cream cheese, softened
½ cup brown sugar
5 oz pumpkin puree
⅔ cup heavy cream
1 tbsp white sugar
1 tsp vanilla extract
2 tsp pumpkin pie spice
Orange gel food coloring
Directions:
Preheat oven to 350°F. Line a baking sheet with parchment paper.
Cream butter, oil, sugars, egg, and vanilla until smooth. Add flour, salt, and baking powder. Form 9 cookies, flatten slightly, and indent the center.
Bake for 8-9 minutes.
For the filling, whip cream cheese, brown sugar, and pumpkin puree. Fold in whipped cream, sugar, and vanilla.
Pipe filling into the cookie centers, top with whipped cream, and serve.
