Golden and crispy on the outside with a soft, flavorful inside, these fritters are a perfect nutritious option for lunch, snacks, or a light dinner. Packed with wholesome ingredients and fragrant spices, they’re delicious served with yogurt or tahini sauce.
Ingredients:
1 1/2 cups cooked chickpeas (or 1 can, drained and rinsed)
1 medium sweet potato, grated
1/4 cup chopped red onion
2 garlic cloves, minced
1/4 cup chopped fresh parsley or cilantro
1 egg
1/4 cup flour (or chickpea flour for gluten-free)
1 tsp ground cumin
Salt and black pepper, to taste
Olive oil, for frying
Directions:
In a bowl, mash chickpeas with a fork or potato masher, leaving some texture.
Add grated sweet potato, chopped onion, minced garlic, fresh herbs, egg, flour, cumin, salt, and pepper. Mix well until combined.
Heat olive oil in a skillet over medium heat.
Scoop the mixture into small patties and cook for 3–4 minutes per side until golden brown and crispy.
Drain fritters on paper towels and serve warm with yogurt, tzatziki, or tahini sauce.
