Ingredients:
– 4 boneless, skinless chicken breasts
– 2 tablespoons olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 1 can (14 oz) diced tomatoes
– 1/2 cup heavy cream
– 1 teaspoon dried basil
– Salt and pepper to taste
– Fresh basil leaves for garnish
Directions:
1. Season the chicken breasts with salt and pepper.
2. In a large skillet, heat olive oil over medium-high heat.
3. Add the chicken breasts to the skillet and cook until browned on both sides, about 5-7 minutes per side. Remove from skillet and set aside.
4. In the same skillet, add diced onion and garlic. Cook until softened, about 3-4 minutes.
5. Add the diced tomatoes (with juices) to the skillet and bring to a simmer.
6. Stir in the heavy cream and dried basil. Season with salt and pepper.
7. Return the chicken breasts to the skillet and spoon the tomato cream sauce over them.
8. Cover and let simmer for 15-20 minutes, or until the chicken is cooked through.
9. Garnish with fresh basil leaves before serving.
