Description

Creamy Alfredo Lasagna Soup combines the rich, comforting flavors of traditional Alfredo sauce with the heartiness of lasagna. Made with ground sausage, tender lasagna noodles, and fresh spinach in a creamy Parmesan-infused broth, this family-friendly dish is a cozy dinner favorite. Perfect for weeknights or any time you crave Italian-inspired comfort food.

Ingredients

  • 1/2 pound ground sausage
  • 1 small onion, diced
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, finely chopped
  • 4 cups baby spinach leaves
  • 5 cups low-sodium chicken broth
  • 5 lasagna noodles, broken into pieces
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 cup milk
  • 1 cup grated Parmesan cheese

Instructions

  • Cook the Sausage: Brown ground sausage in a large pot over medium heat.
  • Add Vegetables: Stir in diced onion and sliced mushrooms, cooking until softened.
  • Incorporate Garlic and Spinach: Add garlic and spinach; cook until spinach wilts.
  • Add Broth: Pour in chicken broth; bring to a boil and simmer for 5 minutes.
  • Add Pasta and Seasonings: Add broken lasagna noodles, oregano, and basil; cook for 10-12 minutes or until noodles are tender.
  • Prepare Alfredo Sauce: In a separate pan, melt butter, stir in flour, and cook for 1-2 minutes. Gradually whisk in milk and cook until thickened.
  • Combine and Serve: Stir Parmesan cheese into the Alfredo sauce until smooth. Add to the soup, heat through, and serve warm.

Notes

  • For added vegetables, include zucchini or bell peppers.
  • To prevent mushy noodles, cook them al dente and serve promptly.
  • Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
