Cream Cheese & Spinach Stuffed Chicken Breast

🍗 Ingredients:

2 large boneless, skinless chicken breasts

4 oz (115g) cream cheese, softened

1/2 cup chopped spinach (fresh or thawed frozen, squeezed dry)

1/4 cup grated Parmesan (or mozzarella, your call!)

2 cloves garlic, minced

1/4 tsp black pepper

1/4 tsp paprika (optional for color)

Olive oil or butter for searing

🔪 Instructions:

Preheat oven to 375°F (190°C).

Mix the filling:
Combine cream cheese, spinach, garlic, Parmesan, pepper, and paprika in a bowl. Stir until creamy.

Prep the chicken:
Slice a pocket into each chicken breast (don’t cut all the way through). Stuff generously with the cream cheese mixture.

Secure & sear:
Use toothpicks to hold it shut if needed. Sear chicken in a skillet with olive oil—2–3 min per side until golden.

Bake:
Transfer to an oven-safe dish and bake 20–25 min until chicken is cooked through (internal temp: 165°F / 74°C).

Rest & serve:
Let rest 5 minutes before slicing. Serve with rice, pasta, or a crisp green salad.
