Ingredients:

1 cup 2% cottage cheese

2 tablespoons maple syrup (sugar-free syrup can be used)

1 teaspoon pure vanilla extract

1½ cups almond flour (or heat-treated all-purpose flour)

½ cup vanilla protein powder

½ cup chocolate chips, divided (sugar-free options available)

1 teaspoon coconut oil

Directions:

In a blender or food processor, combine the cottage cheese, maple syrup, and vanilla extract; blend until smooth.

Transfer the mixture to a bowl and stir in the almond flour, protein powder, and half of the chocolate chips until a dough forms.

Refrigerate the dough for 30 minutes to firm up.

Line a baking sheet with parchment paper.
