Cottage Cheese and Yogurt Soufflé

A light and protein-rich soufflé made with cottage cheese and Greek yogurt, offering a gluten-free, grain-free, sugar-free, and low-carb option for breakfast, snack, or dessert.

Ingredients:

– 2 dl (200 ml) cottage cheese

– 2 eggs

– 1 dl (100 ml) Greek yogurt or quark

– 6-7 drops vanilla stevia drops or vanilla extract

– 1-2 teaspoons sweetener (optional)

Directions:

1. Preheat the oven to 200°C (392°F).

2. In a bowl or blender, combine all the ingredients and mix until smooth.

3. Divide the mixture between two oven-safe bowls.

4. Bake in the upper part of the oven for 14-18 minutes, until the soufflé is golden brown, set on the edges, but still slightly wobbly in the middle. Avoid overbaking to prevent dryness.

5. Top with fruits, berries, jam, or any other topping of your choice before serving.
