- 1/2 cup packed brown sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
- Add the eggs one at a time, mixing well after each. Stir in the vanilla extract.
- Gradually combine the dry ingredients with the wet ingredients until just mixed. Avoid overmixing.
- Gently fold in the chocolate chips and mini marshmallows.
- Refrigerate the dough for 30 minutes.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing 2 inches apart.
- Bake for 10-12 minutes until edges are set but centers remain soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- To prevent marshmallow over-melting, chill the dough before baking and add a few marshmallows on top of each dough ball.
- Dutch-processed cocoa powder provides a deeper flavor.
