Chewy Banana Oatmeal Cookies

Soft, naturally sweetened cookies made with ripe bananas, hearty oats, and simple pantry staples – a perfect guilt-free treat!

Ingredients:

2 ripe bananas, mashed

1 1/2 cups rolled oats

1/4 cup peanut butter (or almond butter)

1/4 cup maple syrup (or honey)

1/2 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/4 cup dark chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)

Directions:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the mashed bananas, peanut butter, maple syrup, cinnamon, and vanilla extract. Mix well until smooth.

Add the rolled oats to the wet ingredients and stir until thoroughly combined. If using, fold in the chocolate chips and chopped nuts.
