🔪 Instructions:
Prep the zucchini:
Grate zucchinis and place in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible to avoid soggy bites.
Make the mixture:
In a large bowl, combine grated zucchini, shredded cheese, Parmesan, minced garlic, breadcrumbs, egg, salt, and pepper. Mix well until combined.
Form the bites:
Using your hands or a small cookie scoop, shape the mixture into small balls or patties (about 1 to 1.5 inches).
Cook the bites:
Heat a non-stick skillet over medium heat with a little oil.
Cook zucchini bites for about 3–4 minutes per side until golden brown and crispy.
