Ingredients
- 1 bunch asparagus (ends trimmed or snapped off)
- 2 tbsp olive oil
- 3 garlic cloves (minced)
- Salt and pepper to taste
- 1/2 cup shredded mozzarella cheese
- 1/4 cup shredded Parmesan cheese
Instructions
- Preheat the oven to 425°F (220°C).
- Spread the asparagus in a single layer on a large sheet pan.
- In a small bowl, whisk together olive oil and minced garlic. Pour the garlic oil mixture over the asparagus and toss to coat evenly.
- Season with salt and pepper to taste.
- Roast for 15 minutes, or until the asparagus is tender but not yet wilted.
- Remove from the oven and sprinkle the shredded mozzarella and Parmesan over the asparagus.
- Return to the oven for another 2 minutes, or until the cheese has melted.
- Turn on the broiler and broil for 1-2 minutes, or until the cheese is bubbly and golden brown.
- Serve immediately and enjoy!
