Crispy Fried Cabbage Delights

Ingredients:

– 2 1/2 cups grated cabbage

– 1/4 cup finely chopped onion

– 1/2 cup flour

– 1 tsp salt

– 1/4 tsp pepper

– 2 eggs, lightly beaten

– Spoon of bacon grease (for flavor, optional)

– Oil for frying (enough to coat the bottom of your skillet)

Directions:

1. Prep Ingredients: In a large mixing bowl, combine the grated cabbage, chopped onion, flour, salt, and pepper. Mix these dry ingredients thoroughly to distribute the seasoning evenly.

2. Add Eggs and Bacon Grease: Add the lightly beaten eggs and a spoon of bacon grease (if using) to the cabbage mixture. Stir until all ingredients are well combined and the mixture holds together.

3. Heat the Skillet: Heat oil in a cast-iron skillet over medium-high heat. The oil should be hot enough to sizzle when a drop of the batter is added.

4. Form and Fry Patties: Spoon the cabbage mixture into the hot skillet, forming small patties. Flatten them slightly with the back of the spoon to ensure even cooking.

5. Cook Patties: Fry the patties for about 2-3 minutes on each side or until they are golden brown and crispy.

6. Serve: Remove the patties from the skillet and drain on paper towels. Serve hot and enjoy your crispy cabbage delights!
