Blueberry Oatmeal Breakfast Bars

These delicious and healthy oatmeal bars are packed with sweet blueberries, perfect for a quick and satisfying breakfast or snack.

Ingredients:

2 cups rolled oats

1/2 cup almond flour

1/4 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/2 cup unsweetened almond milk (or milk of choice)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup fresh or frozen blueberries

Directions:

Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking pan.

In a large bowl, combine the rolled oats, almond flour, cinnamon, baking powder, and salt.

In a separate bowl, whisk together the honey or maple syrup, applesauce, almond milk, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until well combined.

Gently fold in the blueberries, being careful not to crush them.

Pour the batter into the prepared baking pan and spread it out evenly.

Bake for 25-30 minutes, or until the bars are golden and firm to the touch.
