Description

Soft, fudgy Blueberry Cheesecake Protein Balls are a delicious low-carb snack packed with protein and the tangy sweetness of blueberries. Quick to make with just five ingredients, they’re perfect for on-the-go treats or post-workout energy.


Ingredients

  • ½ cup vanilla protein powder
  • ½ cup coconut flour
  • 3 tablespoons granulated sweetener of choice (e.g., monk fruit sweetener)
  • 4 tablespoons cream cheese (dairy or dairy-free)
  • ¼ cup blueberry puree (see note)

Instructions

  • In a mixing bowl, combine the vanilla protein powder, coconut flour, and granulated sweetener.
  • Add the cream cheese and blueberry puree to the dry mixture.
  • Knead the mixture with your hands until a dough forms. Adjust consistency as needed: add more coconut flour if the dough is too soft or a teaspoon of water/sweetener if it’s too thick.
  • Roll the dough into tablespoon-sized balls.
  • Enjoy immediately or refrigerate for 10–15 minutes to firm up. Store leftovers in an airtight container in the refrigerator.

Notes

To make blueberry puree, mash fresh blueberries with a fork or blend them in a small blender. Adding a splash of lemon juice enhances the color and tanginess.
