Ingredients
- 1.5 lbs beef tenderloin, cut into thin strips
- 2 tablespoons vegetable oil
- 6 tablespoons butter
- 1/4 cup finely chopped shallots
- 1 lb small button mushrooms, thickly sliced
- 1 cup beef broth
- 2 tablespoons cognac
- 3/4 cup sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon tomato paste
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Prepare the Beef: Season the beef strips with salt and pepper. Heat vegetable oil in a large skillet over medium-high heat, sauté beef until browned (4-5 minutes). Remove and set aside.
- Cook the Shallots and Mushrooms: Melt butter in the same skillet. Add shallots and cook until translucent (2 minutes). Add mushrooms and sauté until tender (5 minutes).
- Deglaze the Pan: Pour in cognac, scraping up browned bits. Let alcohol evaporate (1 minute).
- Prepare the Sauce: Stir in beef broth, Dijon mustard, and tomato paste. Simmer until thickened (5 minutes).
- Combine Ingredients: Lower heat, return beef to skillet, and stir in sour cream. Heat through without boiling (2 minutes). Adjust seasoning.
- Serve: Garnish with parsley and serve hot over mashed potatoes, rice, or egg noodles.
Notes
- Substitute beef with chicken, pork, or tofu for variations.
- Add paprika or cayenne for extra spice.
- Avoid boiling the dish after adding sour cream to prevent curdling.
