  • 6 tablespoons butter
  • 1/4 cup finely chopped shallots
  • 1 lb small button mushrooms, thickly sliced
  • 1 cup beef broth
  • 2 tablespoons cognac
  • 3/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon tomato paste
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  • Prepare the Beef: Season the beef strips with salt and pepper. Heat vegetable oil in a large skillet over medium-high heat, sauté beef until browned (4-5 minutes). Remove and set aside.
  • Cook the Shallots and Mushrooms: Melt butter in the same skillet. Add shallots and cook until translucent (2 minutes). Add mushrooms and sauté until tender (5 minutes).
  • Deglaze the Pan: Pour in cognac, scraping up browned bits. Let alcohol evaporate (1 minute).
  • Prepare the Sauce: Stir in beef broth, Dijon mustard, and tomato paste. Simmer until thickened (5 minutes).
  • Combine Ingredients: Lower heat, return beef to skillet, and stir in sour cream. Heat through without boiling (2 minutes). Adjust seasoning.
  • Serve: Garnish with parsley and serve hot over mashed potatoes, rice, or egg noodles.
