Bang Bang Chicken Skewers Recipe

Ingredients:

For the Chicken Marinade:
1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized chunks

2 tbsp olive oil

1 tbsp soy sauce

1 tsp garlic powder

1 tsp ground ginger

1/2 tsp onion powder

1/4 tsp black pepper

1 tbsp lime juice

For the Bang Bang Sauce:
1/4 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust to heat preference)

1 tsp honey or maple syrup (for a touch of sweetness)

1 tbsp lime juice

Optional: Chopped green onions or sesame seeds for garnish

Marinate the chicken:
In a bowl, mix olive oil, soy sauce, garlic powder, ginger, onion powder, pepper, and lime juice. Add the chicken chunks and toss to coat. Marinate for at least 30 minutes (or overnight for more flavor).

Preheat grill or skillet:
If grilling, preheat the grill to medium-high heat. For a skillet, heat it over medium heat with a little oil.

Thread the chicken onto skewers:
Thread the marinated chicken onto wooden or metal skewers, ensuring they’re evenly spaced.

Cook the chicken:

Grill: Cook the skewers for 5–6 minutes per side, or until fully cooked through (internal temperature of 165°F or 75°C).

Skillet: Cook the chicken for 4–5 minutes per side until golden brown and cooked through.

Make the Bang Bang sauce:
In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.

Coat the chicken:
Once the chicken is cooked, brush or drizzle the Bang Bang sauce over the skewers. You can also toss the chicken in the sauce if you prefer every piece coated.

Serve:
Garnish with chopped green onions or sesame seeds for an extra touch. Serve with extra sauce on the side for dipping!
