Ingredients:
2 cups vanilla wafer crumbs
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
2 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
2 ripe bananas, mashed
2 eggs
For the Banana Pudding Layer:
1 (3.4 oz) package instant banana pudding mix
1 and 1/2 cups milk
For the Topping:
1 cup whipped cream or whipped topping
Crushed vanilla wafers for garnish
Sliced bananas for garnish
Directions:
Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper.
Mix vanilla wafer crumbs with melted butter. Press the mixture into the bottom of the prepared pan to form a crust. Bake for 10 minutes, then let it cool.
Beat cream cheese, granulated sugar, and vanilla extract in a bowl until smooth. Add mashed bananas and eggs, one at a time, mixing well after each addition.
Pour the cheesecake mixture over the cooled crust. Bake for 30-35 minutes or until set.
In a bowl, whisk together the banana pudding mix and milk. Let it sit for a few minutes to thicken.
Once the cheesecake is cool, spread the banana pudding layer on top.
Cover and refrigerate for at least 4 hours, or overnight.
Before serving, top with whipped cream, crushed vanilla wafers, and sliced bananas.
