Baked Stuffed Shrimp Casserole

Ingredients:

1 ½ lbs large shrimp (peeled & deveined, tails on or off)

1 ½ cups crushed Ritz crackers (or breadcrumbs)

4 tbsp butter, melted

2 cloves garlic, minced

2 tbsp fresh parsley, chopped

Juice of 1 lemon

1 tsp Old Bay seasoning (optional)

Salt & pepper to taste

Extra butter for drizzling

Instructions:

Preheat oven to 375°F (190°C). Lightly butter a casserole dish.

Arrange shrimp in a single layer in the dish.

In a bowl, mix crackers, melted butter, garlic, parsley, lemon juice, Old Bay, salt & pepper.

Spoon the cracker mixture evenly over the shrimp.

Drizzle extra melted butter over the top (optional but sooo good).

Bake 15-18 minutes until shrimp are pink and topping is golden.

Squeeze fresh lemon over before serving.

Optional Add-ins:
A little white wine splashed in the dish

Grated parmesan in the topping

Chopped scallions mixed in

Serve with:
→ Rice, garlic bread, or a fresh salad!
