Apple Pie Oatmeal Cookies

Ingredients:

1 cup whole wheat flour

1 1/2 cups old-fashioned oats

1 1/2 tsp baking powder

1 1/2 tsp ground cinnamon

1/4 tsp salt

2 tbsp unsalted butter, melted

1 large egg

1 tsp vanilla extract

1/2 cup pure maple syrup

1/2 cup finely diced apple

Directions:

Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, oats, baking powder, cinnamon, and salt.

In a separate bowl, whisk together the melted butter, egg, and vanilla extract. Stir in the maple syrup until well combined.

Add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the diced apple.

Drop the cookie dough onto the prepared baking sheet using a spoon, forming 15 rounded mounds.

Flatten each cookie slightly and bake for 12-15 minutes, or until the edges are set. Let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack.
