Ingredients:

1 1/2 cups Italian-style dried breadcrumbs

1 1/3 cups freshly grated Parmesan, divided

1 teaspoon salt

2 16-ounce packages mozzarella cheese sticks

4 large eggs, beaten to blend

1 1/2 cups vegetable oil

Instructions:




In a medium bowl, combine the Italian-style dried breadcrumbs, 1 cup of freshly grated Parmesan, and salt.

Cut each mozzarella cheese stick in half.

In a shallow bowl, beat the eggs to blend. Dip each cheese stick into the beaten eggs, ensuring that the cheese is completely coated. Allow the excess egg to drip back into the bowl.

Coat the cheese sticks in the breadcrumb mixture, patting to adhere and coat them completely. Repeat the process by dipping the cheese sticks in the egg and breadcrumb mixture for a second time.

Place the coated cheese sticks on a baking sheet, cover, and freeze until they are frozen, approximately 2 hours.

In a large frying pan, heat the vegetable oil over medium heat.

Working in batches to avoid overcrowding, fry the cheese sticks until they turn golden brown, about 1 minute per side.

Using a slotted spoon or tongs, transfer the fried cheese sticks to plates.

Sprinkle the remaining freshly grated Parmesan over the fried cheese sticks.
