Delicate Spinach and Ricotta Dumplings in a Flavorful Tomato Sauce
Ingredients:
– 1 cup ricotta cheese
– 1/2 cup grated Parmesan cheese
– 1/2 cup frozen chopped spinach, thawed and drained
– 1/4 cup breadcrumbs
– 1 egg
– 1/2 teaspoon garlic powder
– Salt and pepper to taste
– 1 can (15 oz) tomato sauce
– 1/2 teaspoon dried basil
– 1/2 teaspoon dried oregano
– 1/4 teaspoon red pepper flakes
Directions:
In a large bowl, combine the ricotta cheese, Parmesan cheese, spinach, breadcrumbs, egg, garlic powder, salt, and pepper. Mix well until fully combined.
Using a spoon or cookie scoop, form the mixture into small balls and set aside.
In a separate saucepan, combine the tomato sauce, dried basil, dried oregano, and red pepper flakes. Bring to a simmer over medium heat.
Gently drop the spinach and ricotta dumplings into the simmering sauce, making sure they are fully covered. Cover the saucepan and let the dumplings cook for 10-12 minutes, or until they are cooked through.
Serve the dumplings hot, topped with extra Parmesan cheese and fresh basil, if desired.
