Ingredients
- For the Soup:
- 2 tbsp olive oil
- 2 boneless, skinless chicken breasts
- 1 tsp lemon pepper seasoning
- ½ cup dry white wine (or extra chicken broth)
- 2 tbsp butter
- 1 yellow onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 8 cups chicken broth
- 1 chicken bouillon cube
- 1 tbsp soy sauce
- ⅓ cup fresh lemon juice
- ½ cup Parmesan cheese, grated
- 1 Parmesan cheese rind (optional)
- 6 oz angel hair pasta
- For the Seasonings:
- 1 tsp dried parsley
- 1 tsp dried basil
- ½ tsp dried oregano
- ¼ tsp mustard powder
- Pinch of turmeric
- Salt and pepper to taste
Instructions
- Prepare the Chicken:
- Heat olive oil in a large pot over medium-high heat.
- Season chicken with lemon pepper seasoning.
- Sear chicken for 5-7 minutes on each side until golden. Remove and set aside.
- Sauté the Vegetables:
- In the same pot, melt butter.
- Add onion, carrots, celery, and garlic. Sauté for 5-7 minutes until softened.
- Deglaze the Pot:
- Pour in white wine (or broth), scraping up browned bits. Simmer for 2 minutes.
- Add Broth and Chicken:
- Return chicken to the pot. Add chicken broth, bouillon cube, soy sauce, lemon juice, Parmesan cheese, and rind. Stir.
- Add Seasonings:
- Mix in parsley, basil, oregano, mustard powder, turmeric, salt, and pepper. Bring to a gentle boil.
- Cook the Pasta:
- Add angel hair pasta to the pot. Cook until al dente (3-4 minutes).
- Shred the Chicken:
- Remove chicken, shred with two forks, and return to the pot.
- Adjust Seasoning:
- Taste and adjust seasoning with additional salt, pepper, or lemon juice as needed.
- Serve:
- Ladle soup into bowls and garnish with extra Parmesan, if desired.
