Chewy Pumpkin Snickerdoodle Cookies

Ingredients:

2 3/4 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 cup unsalted butter, softened

1 1/4 cups granulated sugar

1/2 cup pumpkin puree

1 large egg

1 teaspoon vanilla extract

Cinnamon-Sugar Coating:

1/4 cup granulated sugar

1 tablespoon cinnamon

Directions:

Preheat oven to 350°F (175°C). In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a separate bowl, cream butter and sugar until fluffy. Mix in pumpkin, egg, and vanilla. Gradually add dry ingredients until combined.

In a small bowl, combine cinnamon and sugar for coating. Roll dough into balls, coat in cinnamon-sugar, and place on a baking sheet.
