Ingredients:
Shortbread Crust
– 1/2 cup unsalted butter, melted
– 1/4 cup granulated sugar
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– 1 cup all-purpose flour
Apple Filling
– 2 large apples, peeled and diced
– 2 tablespoons all-purpose flour
– 2 tablespoons granulated sugar
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
Streusel Topping
– 1/2 cup old-fashioned oats
– 1/3 cup packed brown sugar
– 1/4 teaspoon ground cinnamon
– 1/4 cup all-purpose flour
– 1/4 cup unsalted butter, cold and cut into small cubes

Directions:
1. Preheat your oven to 300°F (150°C) and line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides.
2. Prepare the crust by stirring together melted butter, granulated sugar, vanilla extract, and salt. Add the flour and mix until combined. Press the mixture firmly into the lined pan and bake for 15 minutes, then set aside.
3. Make the apple filling by combining the diced apples, flour, sugar, cinnamon, and nutmeg in a bowl. Toss until apples are evenly coated, then layer them over the baked crust.
4. Prepare the streusel topping by mixing oats, brown sugar, cinnamon, and flour in a bowl. Cut in the cold butter cubes with a pastry cutter or fork until the mixture resembles coarse crumbs. Sprinkle evenly over the apple layer.
