Ingredients:
1 medium yellow onion, diced
2 cloves garlic, minced
2 cans low-sodium chicken broth (14 oz each)
2 cans diced green chiles (4 oz each)
1 can corn, drained (15 oz)
2 cans white beans (cannellini or Northern), drained and rinsed (15 oz each)
1 tsp cumin
1/2 tsp each: chili powder, oregano, paprika, ground coriander
1/4 tsp cayenne pepper
Salt and pepper, to taste
8 oz cream cheese, softened and cubed
2 cups shredded rotisserie chicken (about 1 lb)
1 tbsp lime juice
1 tbsp fresh cilantro, chopped

Directions:
In a large pot over medium-high heat, sauté onions in olive oil until soft. Add garlic, cooking briefly.
Add chicken broth, green chiles, corn, beans, and seasonings. Bring to a boil, then simmer on medium-low for 15 minutes.
For a thicker chili, blend 1 cup of chili and return it to the pot.
Stir in cream cheese and shredded chicken; let cook until cream cheese melts and chicken is heated through.
Add lime juice and cilantro, stir well, and adjust seasoning as needed.
Serve hot, topped as desired.
