This comforting taco potato casserole combines seasoned ground beef, hash browns, and gooey cheese, all slow-cooked for a flavor-packed meal. Perfect for busy nights, it’s an easy one-pot dish that brings together the best of taco flavors with creamy, cheesy potatoes.
Ingredients:
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 can diced tomatoes with green chilies (10 oz)
1/2 cup sour cream
1-2 packets taco seasoning
1 can cheddar cheese soup (10.5 oz)
2 lbs frozen shredded hash browns
2 1/2 cups shredded cheese
Directions:
In a skillet over medium heat, cook the ground beef, diced onion, and minced garlic until the beef is browned and the onion is soft. Drain any excess fat.
Transfer the cooked ground beef mixture to a crockpot. Add the diced tomatoes with green chilies, sour cream, taco seasoning, cheddar cheese soup, shredded hash browns, and 2 1/2 cups shredded cheese.
Stir the mixture until everything is well combined.
Cover and cook on low for 4 hours or on high for 2 hours, until the casserole is heated through and the cheese is melted.
