Pumpkin Bars with Cream Cheese Frosting

Soft, spiced pumpkin bars topped with a creamy homemade cream cheese frosting. Perfectly sweet and cake-like, they’re a crowd-pleaser for fall gatherings or holiday potlucks.

Ingredients:

Pumpkin Bars

1 can (15 oz) pumpkin puree

2 cups all-purpose flour

1 ½ cups white sugar

1 cup butter, softened

4 large eggs

1 tsp baking soda

2 tsp baking powder

2 tsp ground cinnamon

1 tsp pumpkin pie spice

½ tsp salt

Cream Cheese Frosting

5 cups confectioners’ sugar

8 oz cream cheese, softened

¼ cup butter, softened

1 tsp pure vanilla extract

Directions:

Preheat oven to 350°F (175°C). Line a 12″x17″ pan with parchment and spray sides.

Cream butter and sugar; add eggs. Mix in flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt. Fold in pumpkin puree.

Pour into pan and bake 20–25 minutes. Cool.

Beat cream cheese, butter, vanilla, and confectioners’ sugar for frosting. Spread evenly on cooled bars.
