Deliciously soft and moist muffins made with peanut butter, ripe bananas, and chocolate chips, all mixed in a blender for quick and easy prep. Perfect for a healthy snack or breakfast!
Ingredients:
– 2 ripe bananas
– 1/2 cup peanut butter (smooth or chunky)
– 1/4 cup honey or maple syrup
– 1 large egg
– 1/4 cup rolled oats
– 1 teaspoon vanilla extract
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/4 cup mini chocolate chips
Directions:
1. Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners or lightly grease with cooking spray.
2. In a blender, combine the bananas, peanut butter, honey (or maple syrup), egg, oats, vanilla extract, baking soda, and salt.
3. Blend on high until the mixture is smooth and well combined.
4. Stir in the mini chocolate chips by hand.
5. Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
6. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
