Ingredients:
1 ripe banana, mashed
1/2 cup peanut butter
1/4 cup maple syrup or honey
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1 1/4 cups rolled oats
1/4 cup mini chocolate chips (optional)
1/4 cup chopped walnuts (optional)
Directions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, mash the ripe banana until smooth.
Add the peanut butter, maple syrup, vanilla extract, cinnamon, and baking soda to the mashed banana. Stir until well combined.
Stir in the rolled oats until the mixture forms a thick dough.
If using, fold in the chocolate chips and walnuts.
Drop spoonfuls of dough onto the prepared baking sheet, flattening them slightly with a spoon.
Bake for 10-12 minutes, or until the edges are golden brown.
Remove from oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
