Soft, chewy, and loaded with toasted pecans, these butter pecan cookies are a perfect treat for the holidays or any occasion.
Ingredients:
1 cup unsalted butter, melted and cooled 🧈
1/2 cup granulated sugar
1 cup brown sugar, packed
2 large eggs 🥚
1 1/2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon cinnamon powder
1 teaspoon cornstarch
1 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 cups roughly chopped pecans, toasted 🌰
Optional: 1/2 cup toffee bits
Directions:
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs and vanilla extract, mixing until smooth.
Stir in the flour, cinnamon, cornstarch, baking soda, and baking powder until just combined.
Fold in the toasted pecans (and toffee bits, if using).
Chill the dough for 30-45 minutes to make it easier to handle.
Preheat the oven to 350°F (175°C). Scoop out small portions of dough and roll into balls. Place them on a parchment-lined baking sheet.
Bake for 11-14 minutes, until the cookies are golden brown and firm along the edges.
Let them cool on the tray for a few minutes, then transfer to a wire rack to cool completely.
