Ingredients:
4 medium russet potatoes, peeled and diced into small cubes
1 small onion, diced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon dried oregano
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (optional)
Directions:
Preheat the Pan:
Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Cook the Potatoes:
Add the diced potatoes to the hot skillet and spread them out in an even layer. Cook for about 10 minutes, stirring occasionally, until they begin to turn golden brown.
Add Onion and Seasonings:
Stir in the diced onion, garlic powder, paprika, oregano, salt, and pepper. Continue to cook for an additional 10-15 minutes, stirring occasionally, until the potatoes are crispy and fully cooked through.
