Sicilian Whole Orange Cake

A fragrant and moist cake made with whole oranges, offering a burst of citrus flavor in every bite. This traditional Sicilian treat is perfect for a light dessert or afternoon tea.

Ingredients:

2 small or 1 large orange, washed and unpeeled

3 large eggs

1 1/4 cups granulated sugar

1/2 cup olive oil (or vegetable oil)

2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Powdered sugar, for dusting (optional)

Directions:

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line it with parchment paper.

Cut the orange(s) into chunks, removing any seeds. Place the chunks in a food processor and pulse until completely pureed. The mixture should be smooth, with no large pieces remaining.

In a large bowl, beat the eggs and sugar together until light and fluffy. Add the pureed orange and olive oil, mixing until well combined.

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Once cooled, dust the top with powdered sugar, if desired. Slice and serve.
