Ingredients:
2 eggs
1 1/2 cups milk
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
2 tbsp sugar
1/2 tsp vanilla extract
Powdered sugar for dusting
Oil for frying
Directions:
In a medium bowl, beat the eggs and then mix in the milk and vanilla extract.
In a separate bowl, combine the flour, baking powder, salt, and sugar. Gradually add the dry ingredients to the wet ingredients, mixing until the batter is smooth.
Heat oil in a deep fryer or large pot to 375°F (190°C).
Pour the batter into a funnel, using your finger to stop the flow. Release your finger and move the funnel in a circular motion to create spiral-like shapes in the hot oil. Fry until golden brown, about 2 minutes on each side.
Carefully remove the funnel cakes with a slotted spoon and drain on paper towels. Dust with powdered sugar while still warm.
