1 lb large shrimp, peeled and deveined
8 oz linguine or spaghetti
4 tablespoons unsalted butter, divided
2 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon Cajun seasoning (adjust to taste)
1/4 teaspoon red pepper flakes (adjust to spice preference)
Juice of 1 lemon
1/4 cup fresh parsley, chopped
Salt and black pepper to taste
Grated Parmesan cheese for garnish (optional)
Directions:
Prepare Linguine: Cook the linguine or spaghetti according to the package instructions until al dente. Drain and set aside.
Cook Shrimp: In a large skillet, heat 2 tablespoons of butter and olive oil over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Sauté Shrimp: Add the peeled and deveined shrimp to the skillet. Cook for 2-3 minutes on each side or until they turn pink and opaque.
Season: Sprinkle the Cajun seasoning, red pepper flakes, salt, and black pepper over the shrimp. Toss to coat evenly.
Deglaze with Lemon Juice: Squeeze the juice of 1 lemon into the skillet and stir to combine.
Add Pasta: Add the cooked linguine or spaghetti to the skillet with the shrimp.
Add Remaining Butter & Parsley: Add the remaining 2 tablespoons of butter and chopped fresh parsley. Toss everything together until the butter is melted and the pasta is coated in the flavorful sauce.
Serve: Remove from heat and serve your delicious Cajun Shrimp Scampi hot.
