Ingredients:
1/2 cup unsalted butter, softened
1/2 cup sugar
1 large egg
1/2 tsp almond extract
1/2 tsp vanilla extract
1 cup all-purpose flour
1/2 cup almond flour (or very finely ground almonds)
1/2 tsp baking powder
Filling & Topping:
1/4 cup almond paste or frangipane (optional but sooo good)
1/4 cup sliced almonds
Powdered sugar, for dusting
🥣 Instructions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
Cream butter & sugar until light and fluffy.
Beat in egg, vanilla, and almond extract.
Whisk dry ingredients in a separate bowl: flour, almond flour, and baking powder.
Add to wet mixture and stir until just combined.
Optional almond paste center:
Roll dough into balls (~1.5 tbsp each).
Flatten slightly, add a small dab of almond paste in the center, and wrap the dough around it to seal.
Top & bake:
Press a few sliced almonds on top of each cookie.
Bake for 10–12 minutes, until edges are lightly golden.
Cool & dust with powdered sugar like a croissant in a Paris bakery ✨
