Ingredients:
3 cups fresh strawberries, hulled and halved
3 cups fresh peaches, peeled and sliced
1 tablespoon lemon juice
1/2 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract
1 cup old-fashioned rolled oats
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cut into cubes
Directions:
Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
In a large bowl, combine the strawberries, peaches, lemon juice, granulated sugar, cornstarch, and vanilla extract. Toss gently until the fruit is coated and set aside.
In a separate bowl, mix the oats, flour, brown sugar, cinnamon, and salt. Add the cold butter and use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.
Pour the fruit mixture into the prepared baking dish. Sprinkle the oat topping evenly over the fruit.
Bake for 40-45 minutes, or until the fruit is bubbling and the topping is golden brown.
