1/2 cup (1 stick) unsalted butter, softened
1/2 cup peanut butter (creamy or chunky)
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
3/4 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp salt (optional)
1 cup old-fashioned oats
🧑🍳 Instructions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment.

In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients.
Stir in oats by hand until well mixed.
