Healthy and sugar-free muffins packed with oats, apples, and carrots!
Ingredients:
– 2 cups (200 g) rolled oats, chopped in a blender
– 1 teaspoon baking powder
– 1 cup (240 ml) milk of your choice
– 1 carrot, grated
– 9 dried apricots, rinsed with hot water and chopped
– 4 tablespoons raisins, rinsed with hot water
– 1 apple, grated
– 1 teaspoon cinnamon
– 3 eggs
Directions:
1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
2. In a large bowl, combine the rolled oats and baking powder.
3. Add in the milk and let the mixture sit for 10 minutes to allow the oats to soak.
4. Stir in the grated carrot, chopped apricots, raisins, grated apple, and cinnamon.
5. In a separate bowl, beat the eggs and then fold them into the oat mixture until fully combined.
6. Pour the batter into the prepared muffin tin, filling each cup almost to the top.
7. Bake for 25-30 minutes or until a toothpick inserted into the center of a muffin comes out clean.
8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
