Delicious and chewy oatmeal raisin cookie bars that are perfect for a quick snack or dessert.

Ingredients:

– 1 cup rolled oats
– 1 cup all-purpose flour
– 1/2 teaspoon baking soda
– 1/2 teaspoon cinnamon
– 1/4 teaspoon salt
– 1/2 cup unsalted butter, melted
– 1/2 cup brown sugar
– 1/4 cup granulated sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 1/2 cup raisins

Directions:

1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
2. In a bowl, mix together oats, flour, baking soda, cinnamon, and salt.
3. In a separate bowl, whisk together melted butter, brown sugar, granulated sugar, egg, and vanilla extract until smooth.
4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
5. Fold in the raisins.
6. Press the mixture evenly into the prepared baking dish.
