Ingredients:
2 boneless, skinless chicken breasts (cubed)
1 ½ cups orzo pasta
2 tablespoons olive oil
1 tablespoon Cajun seasoning
3 cloves garlic (minced)
1 small onion (chopped)
1 red bell pepper (diced)
2 cups chicken broth
½ cup heavy cream (or milk)
½ cup grated Parmesan cheese
½ teaspoon black pepper
½ teaspoon smoked paprika (optional)
2 tablespoons chopped parsley (for garnish)
Instructions:
Cook the Chicken:
Heat olive oil in a skillet over medium-high heat.
Toss chicken with Cajun seasoning and cook until golden and cooked through (5-6 minutes).
Remove from skillet and set aside.
Sauté the Veggies & Orzo:
In the same skillet, add garlic, onion, and bell pepper.
Sauté until softened (2-3 minutes).
Stir in orzo and toast for 1-2 minutes.
Simmer:
Pour in chicken broth and bring to a simmer.
Cook until orzo is tender, stirring occasionally (10-12 minutes).
Finish with Cream & Cheese:
Stir in heavy cream, Parmesan, and black pepper.
Add back the cooked chicken and mix well.
