Oatmeal Raisin Cookie Bars

1 cup butter, softened

3/4 cup brown sugar

1/4 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 1/2 cups rolled oats

1 cup all-purpose flour

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp salt

1 1/2 cups raisins

Optional: 1/2 cup chopped nuts (walnuts, pecans)

Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking dish with parchment paper or lightly spray with cooking spray.

Cream the butter and sugars:

Add eggs and vanilla:
Mix in the eggs, one at a time, and then stir in the vanilla extract.

Combine dry ingredients:

Mix the dough:

Spread and bake:
Spread the dough evenly into the prepared baking dish. Press it down gently to flatten.

Bake:
Bake for 25–30 minutes, or until golden brown and a toothpick inserted comes out clean. The edges should be slightly crispy, but the center should remain soft.

Cool and cut:
Let the bars cool completely in the pan before cutting into squares or bars.

Coconut twist: Add 1/2 cup of shredded coconut for extra flavor.

Chocolate chips: Mix in 1/2 cup of chocolate chips for a little extra sweetness.
