Deliciously Gooey Muffins with a Swirl of Cinnamon and Cream Cheese
Ingredients:
– 1 3/4 cups all-purpose flour
– 1/2 cup granulated sugar
– 2 1/2 teaspoons baking powder
– 1/2 teaspoon salt
– 1/4 cup unsalted butter, melted
– 1 egg
– 3/4 cup milk
– 1 teaspoon vanilla extract
– 4 oz cream cheese, softened
– 1/4 cup brown sugar
– 1 teaspoon ground cinnamon
Directions:
Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, mix together the melted butter, egg, milk, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined.
In a small bowl, mix together the cream cheese, brown sugar, and cinnamon until smooth.
Fill each muffin cup halfway with batter, then add a spoonful of the cream cheese mixture. Top with more batter.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let cool before serving.
