Ingredients (Makes 10-12 muffins):
2 ripe bananas (mashed)
2 eggs
1/4 cup honey or maple syrup
1/2 cup Greek yogurt (plain or vanilla)
1 tsp vanilla extract
1 cup oat flour (or blended oats)
1/2 cup vanilla or unflavored protein powder
1 tsp baking soda
1/2 tsp cinnamon
Pinch of salt (optional)
1/4 cup chopped nuts or chocolate chips (optional)
Instructions:
Preheat oven to 180°C (350°F). Line or grease muffin tin.
In a bowl, mash bananas. Add eggs, honey, yogurt, and vanilla. Mix well.
Add oat flour, protein powder, baking soda, cinnamon, and salt. Stir until just combined.
Fold in nuts or chocolate chips if using.
Divide batter into muffin cups (about 3/4 full).
Bake 15-18 minutes, or until golden and toothpick comes out clean.

Tips:
→ Use whey or plant protein — both work!
→ Want extra banana flavor? Add ½ tsp banana extract.
→ Want them sweeter? Add 2 tbsp coconut sugar or more honey.
