Ingredients:
6-8 chicken thighs (boneless or bone-in, skin-on or skinless)
3 tbsp olive oil
Juice of 2 limes
Zest of 1 lime
3 cloves garlic, minced
½ cup fresh cilantro, chopped
1 tsp ground cumin
1 tsp paprika
½ tsp black pepper
(optional) pinch of chili flakes for heat
Instructions:
In a bowl, mix olive oil, lime juice, lime zest, garlic, cilantro, cumin, paprika, and pepper.
Pour over chicken thighs and marinate at least 30 minutes (or overnight for max flavor).
Preheat a skillet (or grill) over medium-high heat.
Cook chicken thighs 5-7 minutes per side until golden and cooked through (internal temp 74°C / 165°F).
Garnish with extra cilantro & lime wedges.
