4 large green tomatoes, sliced 1/2 inch thick
Salt and pepper to taste
1 cup cornmeal
1 cup all-purpose flour
1/4 teaspoon paprika
2 eggs, beaten
1/2 cup buttermilk
Vegetable oil for frying
Directions:
- Lay the sliced green tomatoes on a paper towel and season both sides with salt and pepper. Let them sit for 5 minutes.
- In a shallow dish, mix together cornmeal, flour, and paprika. In another dish, whisk together the beaten eggs and buttermilk.
- Heat the vegetable oil in a large skillet over medium heat. The oil should be about 1/2 inch deep.
- Dip each tomato slice first into the egg mixture, then dredge in the cornmeal-flour mixture, ensuring it’s fully coated.
- Fry the coated tomato slices in batches, for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the fried tomatoes and drain on paper towels. Serve warm, perhaps with a dipping sauce of your choice.
