Mexican Casserole Recipe

Ingredients

1 lb ground beef (or shredded chicken)

1 small onion, chopped

1 can (10 oz) Rotel tomatoes (diced tomatoes with green chilies)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1 tsp chili powder

½ tsp cumin

Black pepper to taste

1 cup shredded cheese (cheddar, Mexican blend, or your favorite)

6 small corn tortillas, cut into quarters

½ cup sour cream (optional)

Fresh cilantro for garnish

Instructions

Preheat oven to 375°F (190°C).

Cook the beef: In a skillet, cook ground beef and onion over medium heat until browned. Drain excess fat.

Mix in tomatoes, beans, corn, and seasonings. Let simmer for 5 minutes.

Layer the casserole: In a greased baking dish, layer half of the tortillas, then half of the beef mixture, and half of the cheese. Repeat the layers.

Bake for 20 minutes until the cheese is melted and bubbly.

Serve with sour cream and fresh cilantro.
