Ingredients:
– 1/2 cup quinoa
– 1 cup water
– 1 cup coconut milk
– 2 tablespoons maple syrup
– 1 teaspoon vanilla extract
– 1/2 teaspoon cinnamon
– Pinch of salt
– Optional toppings: fresh berries, sliced almonds, shredded coconut
Directions:
Rinse quinoa thoroughly in a fine-mesh strainer and then combine with water in a saucepan.
Bring to a boil, then reduce the heat and let simmer for 15-20 minutes, or until the quinoa is cooked and the water has been absorbed.
In a separate saucepan, heat the coconut milk, maple syrup, vanilla extract, cinnamon, and salt over medium heat, stirring occasionally.
Once the quinoa is cooked, pour the coconut milk mixture over the quinoa and stir to combine.
Let the mixture simmer for an additional 5-10 minutes, stirring occasionally, until the pudding reaches your desired consistency.
Remove from heat and let cool slightly before serving.
Top with fresh berries, sliced almonds, or shredded coconut if desired.
